"Mommmmmm" I holler. "Someone has stolen Jimmy."
This was the start to my Cinco de Mayo, which was celebrated on Seis de Mayo because sometimes life just gets in the way. The smell of fresh fish baking was in the background and I had a margarita in one hand. Jimmy, of course, is referring to one of my favorite CDs by Jimmy Buffett. I wanted to listen to "Margaritaville" on repeat to enhance the Mexican mood for the night.
But alas, Jimmy was and is still missing.
I decided to make fish tacos.
I thawed some rock cod (that my dad hand caught in Alaska last summer), sprinkled it with lime juice, covered it in sweet smoked paprika and baked at 350 degrees for 15 minutes.
I took an avocado, cut it in half, and cooked it in the oven at 350 degrees for about 7 minutes. Then, I sprinkled it with lime juice and salt, drizzled honey on it and called it good.
I filled my soft tortilla up with this yummy avocado and the fish. My mom had sprinkled cilantro into some sour cream and I spread that on my tortilla as well. It was a soft taco bursting with flavors. The heated up avocado with the lime, salt, and honey was surprisingly good.
I paired it with some fiesta napkins and plates, downed my margarita, and called it a happy, but late, Cinco de Mayo.
