May 14: National Dance Like A Chicken Day and Buttermilk Biscuit Day

I used to be famous in my household for making hard tack. What is hard tack you may ask? It's pretty much just water and flour mixed together and cooked in the oven until it is super hard. It looked lumpy and it was hard enough to break your teeth.

Pioneers used to bake it and take it on the trek with them on the Oregon Trail. I was obsessed with pioneers. This was when I was eight and nine. I couldn't bake a lot (thank goodness my baking skills have vastly improved) so I made this all the time. My parents were good sports and always ate some. Hard tack could last for months because it didn't spoil easily so my parents couldn't hope to "forget about it" and then have to throw it out because it never went bad.

 Anyways, after today, I'll be famous in my household for making these biscuits because they were damn good! The recipe I followed had 570 reviews and 5/5 perfect stars. You don't come across a recipe like that often.

JazzyJ's Buttery Buttermilk Biscuits:

Ingredients:
- 2 cups flour
- 1/2 teaspoon baking soda
- 1 tablespoon baking powder
- 1 teaspoon salt
- 6 tablespoons butter, cold
- 1 cup buttermilk

Note: It is really easy to make your own buttermilk. Grab a one cup measuring cup, pour in either one tablespoon vinegar OR lemon juice, then fill the rest up with milk. I used almond milk instead of regular milk and it worked well.

Directions:
1. Preheat oven to 450 degrees.
2. Combine flour, baking soda, baking powder, and salt in a bowl.
3. Cut in butter until it is well mixed in.
4. Add in buttermilk until it is just mixed.
5. Place dough on a floured surface and pat until it is approximately 1/2 inch thick. (Do not roll out the dough with a rolling pin.)
6. Cut out biscuits using a cutter. (I decided to make mine heart shaped)
7. Gather the scraps, combine them, flatten to 1/2 inch and make more biscuits until all the dough is gone. Place on a cookie sheet.
8. Bake for 10- 12 minutes or until lightly browned.

Note: The less you handle the dough, the better the biscuits will be!


I would also give these biscuits 5/5 stars. They were super easy to make, buttery, crunchy on the outside yet soft on the inside, and addicting. Addicting as in I ate three right off the cookie sheet.



It's also National Dance Like A Chicken Day. Of course I was willing to dance like a chicken.
