National Tater Day. As in, any type of tater (potato). There were so many good choices to choose from. Baked potatoes, french fries, tater tots, potato pancakes, the list can keep going on.
I happened to go out to eat last night with some friends and I ordered: The Chicken Bacon Tater
So very appropriate! The best part is, that I didn't know I was going out until the last minute. And I didn't know I was going to order food (I thought I would just get a drink) until the last minute. Obviously, it was meant to be.
Now you may be wondering, what exactly is a chicken bacon tater? Well, it is chicken, bacon, chipotle ranch, and french fries all rolled up in a pita bread! Yes, you read that correctly, the french fries are rolled up in the pita, so the french fries are part of the sandwich filling! You also get more french fries on the side so it makes it even better. It was a great way to celebrate National Tater Day!

March 30: National I Am In Control Day
I like to be in control.
One of the reasons I believe I am so claustrophobic is because I'm afraid of not being able to get out of a confined space and therefore I would not be in control.
As a person who is very prone to panicking, I know I do best when in control.
This is a list of ways to help me keep control in my life:
- Know my schedule
- Leave and arrive on time (I am a VERY punctual person. As a very punctual person, living in a family that is not always very punctual, we can have some minor issues. If someone tells me to be ready at a certain time, I am in the car ready to go before that time. This has caused some issues when the family decides to postpone the departure time and I am left waiting in the car until someone comes out to tell me.)
- De-clutter your life. I came back from college with a whole extra van-load of stuff. I came back from Disney with so much stuff that my mom had to hold the biggest sombrero anyone has ever seen in their life, on her lap, in order to fit my brother in the car to take him to the airport (Thank goodness he didn't have to drive all the way home from California with us, we all would never have made it!) Since being back, I have been able to go through a lot of stuff in my life and get rid of it. It feels very releasing to get rid of stuff. One reason my room was never clean was because I had too much stuff. I would then panic at the last moment because I wouldn't be able to find stuff. I would fling around random clothing articles trying to find what I was looking for, and then I just created a bigger mess. Getting rid of stuff can help you feel in control. Donate old clothes to a local thrift shop, that way you are re-using instead of trashing, and you are helping others at the same time!
- Make lists. I learned in college that the feeling of crossing something off of a physical list is very therapeutic.

March 29: National Lemon Chiffon Cake Day
I had never heard of chiffon cake. The directions said to use a tube pan. What the heck is a tube pan? I looked it up, and a tube pan, appeared to be the same as a bundt pan. Perfect! I know we have one of those, somewhere around here. After finally locating it, I was happy.
So this is what I used:
But I also found one of these:
Huh. Well the one I used would create a pretty curvy edge, so I went with that one. Well, later I found out I was wrong. There is a difference between a bundt pan and a tube pan. And you guessed it, I used the bundt pan merely because it looked prettier than what was actually the tube pan. But there really couldn't be a difference, could there?
WRONG again. There is a difference. You are not supposed to use a bundt pan to bake light, airy, or sponge-like cakes (which is pretty much the definition of a chiffon cake). Oooooopps. Well, you really do learn something every day.
So just to reiterate.
If you make a chiffon cake, use THIS PAN PICTURED BELOW!!

Anyways....
JazzyJ's Lemony Luscious Chiffon Cake:
Ingredients:
- 7 eggs, separated
- 2 cups flour
- 1 1/2 cups sugar
- 4 teaspoons baking powder
- 1 teaspoon salt
- 3/4 cups water
- 1/2 cup canola oil (except I only had olive oil so I just used that instead)
- 4 teaspoons grated lemon peel
- 3 teaspoons vanilla extract
- 1/2 teaspoon cream of tartar

Directions:
1. Put all the egg whites in one bowl and let sit at room temperature for 30 minues.
2. Meanwhile, preheat oven to 325 degrees Fahrenheit. Combine flour, sugar, baking powder, and salt.
3. In another bowl, mix together egg yolks, water, canola oil, lemon peel, and vanilla. Add to the dry ingredients and mix.
4. Add cream of tartar to egg whites and beat until stiff peaks form. Slowly fold the egg whites into the other ingredients.
5. Pour into a ten inch tube pan and bake for 55-60 minutes. The cake should kinda spring back at you as you gently poke it.
6. Invert pan and cool for one hour. Remove from pan and frost.
Note: It should be noted that I inverted the pan and immediately removed the cake while it was still hot from the oven. I now clearly see that I luckily avoided a cake disaster. Only a little piece fell off of the cake and you couldn't really tell.

Lemon Frosting:
Note: This was very lemony, if you don't like a strong lemon flavor, I would recommend reducing the amount of lemon juice and grated lemon peel.
Ingredients:
- 1/3 cup softened butter
- 3 1/2 cup powdered sugar
- 1/4 cup lemon juice (this was about the juice from one large lemon)
- 4 teaspoons grated lemon peel
Gently pour the frosting (which is more like an icing) on top and kinda let it run over the sides.

I personally think it looks beautiful, like someone would pay some serious money to eat this bad boy! The icing dripping over the side makes it look so fancy! And it didn't disappoint! I would make and eat this again. So take that! I made this chiffon cake using a bundt pan, not a tube pan, and this cake kicks butt!

March 28: National Something on a Stick Day
So what do you think of when you think of something on a stick?
Maybe a corn dog? A lolly pop? Popsicle? Caramel apples? Shish kabobs? Maybe even a roasted marshmallow?
Well, I couldn't be that normal. So I went on a hunt (around my house) to try to see what I could put on a stick.
Here are the results:
- A fried egg
- A piece of salt water taffy
- An Oreo
- A mini donut
And a smoothie?
Okay, so maybe a smoothie on a stick doesn't actually work out that well...

March 27: National Spanish Paella Day
What is paella? How do you even pronounce it?
Well, I still can't figure out how to pronounce it. It is a Spanish dish that is kind of a mish-mash of whatever you have on hand. You are supposed to use Paella rice, sometimes called Bomba or Valencia rice. I used brown rice. An important ingredient is saffron or saffron threads. My local grocery store didn't have that so I didn't use it. So I'm not sure that I actually made Paella, but I did get adventurous and used a lot of paprika and ended up with a really good meal. And a lot of it! This is probably enough food for one person for two days, if you ate it at every meal. Good thing I like left overs!
JazzyJ's Made Up Super Authentic (Not) Paella Recipe:
Ingredients:
- 1 large chicken breast
- 16 shrimp
- 3 small random sausages found in the freezer (they ended up being maple chicken sausages actually!) (you are supposed to use chorizo which I didn't have)
- 1 lemon (the juice from it)
- half a clove of garlic, squeezed through a garlic thingy
- 3 tablespoons garlic powder
- 2 tablespoons paprika
- pepper to taste
- 2 cups brown rice (less if you don't need to feed an army!)
- 3/4 cup shredded frozen onion you found in your freezer (or practically any 3/4 cup shredded or finely chopped onion)
- 1/2 cups peas
- 2 tablespoons olive oil
- 1 cup chicken broth (I thought I was using chicken broth until I realized it was actually vegetable broth)
You can pretty much add any vegetable. A lot of paella recipes called for tomatoes. I don't eat tomatoes so I nixed that quickly. A lot of people add mussels to their concoction also.
You are supposed to cook this in a paella pan. I don't have one of those so I cooked it in the biggest pan I have. Life is all about being creative and improvising. I've found, that most of the time, as long as you wing it, and have some confidence, people don't even realize you don't know what you are doing!
Instructions:
1. Simmer the rice with the amount of water suggested on the packaging. Five minutes before the rice is down, add in 1 cup chicken (or vegetable broth) and cook. There will be some liquid left which is good.
2. Add the olive oil to your paella (or big pan) and cook the chicken in it. Add in 1 tablespoon paprika and 1 tablespoon garlic powder. Add in the shredded onions.
3. Marinate the shrimp in the remaining paprika and garlic powder, mixed with 1/2 juice from a lemon until the chicken is well cooked.
4. When the chicken is thoroughly cooked, add in the sausage (or chorizo) and the shrimp and cook until everything is well cooked. When the rice is done, add in the rice. Add pepper to taste. Add in peas and other vegetables. Cook until everything is hot and ready to eat!
Some interesting notes:
- I used Sweet Smoked Spanish Paprika that I had previously bought at a specialty spice store. I would highly recommend!
- My family has A LOT of frozen tomatoes in the freezer.
- Use caution while dancing in the kitchen: I did a back high kick move and kicked the bottom of the refrigerator which resulted in my toe bleeding.

March 26: National Spinach Day
I haven't loved spinach until recently. Now I can't seem to stop eating it. Almost every morning I start out by drinking a fruit - spinach smoothie! They are really easy to make, are healthy, and even taste good.
JazzyJ's Spinach Fruit Breakfast Smoothie:
Ingredients:
- 1/2 cup liquid (I normally use orange juice, but milk or any kind of juice would work)
- 1 cup spinach
- 1 banana
- 1 1/2 cup fruit (Currently I am using a frozen mixed fruit blend of raspberries, blueberries, and blackberries)
Blend in a blender until everything is well mixed. Depending on how thick you like your smoothies, you can add more or less liquid. Easy and healthy!
I also find myself just eating spinach by the handful.

To be honest, I have never been that into books by J.R.R. Tolkien. I've read The Hobbit and it was just okay. I did love The Lord of the Rings movies though. But that's mostly because Orlando Bloom was in them and I used to be crazy in love with him.

March 23: National Puppy Day
I was surprised by how many people whom I am friends with on Facebook celebrated National Puppy Day. While I don't have a puppy or a dog, I did have the privilege of visiting a friend of mine who has two lovely dogs. So even though they weren't puppies, and I didn't adopt a puppy, I still interacted with dogs this day. Close enough for me.

March 22: National Bavarian Cream Crepes Day
First of all, I would like everyone to know that Bavarian Cream Crepes auto-corrects to Barbarian Cream Creeps. Several of my friends were quite alarmed as they tried to figure out how I was going to celebrate Barbarian Cream Creeps day.
I knew today was going to be successful because, well, CREPES! YUM! Let's just say that the crepes part was successful, but the Bavarian cream part, well not so much.
Crepe Recipe:
Ingredients:
- 2 eggs
- 1 cup water
- 2/3 cup flour
- pinch of salt
Instructions:
1. Mix all ingredients together and let sit for about 30 minutes. (This allows the gluten to relax which adds to the taste, apparently).
2. Make sure your pan is really hot and greased before pouring in 1/4 cup of batter. Swish the pan around so there is a think layer of batter. Let cook for about 1 minute and then flip and let cook for another minute.
Easy right?
Now for the Bavarian Cream part...
Bavarian Cream:
Ingredients:
- 1 cup milk
- 1 cup half and half
- 1/3 cup sugar
- 1/4 cup cornstarch
- 2 teaspoons vanilla
Instructions:
1. Beat all the ingredients together except for the vanilla in a microwaveable bowl.
2. Heat in the microwave for about 8 minutes, stirring every minute, until thick and creamy.
3. Add vanilla. Set aside to thicken.
See? Only 3 easy steps. Except not. What happened to me (well first of all the mixture kept over flowing in the microwave so every minute I had to clean up a little mess. I didn't have a very big microwaveable bowl), is that the egg started cooking. I ended up with a thin egg-y mixture. It wasn't thick and creamy. It also smelled strongly of egg. I wasn't going to dare put a thin egg-y mixture on top of my beautiful crepes. So what did I do? I threw that bad boy out and decided to make chocolate whipped cream instead. I mean, it's still a cream, it may not be Bavarian, but it is chocolate!
Chocolate Whipped Cream:

- 1 cup whipping cream
- 3 tablespoons sugar
- 1 tablespoon unsweetened cocoa powder
Instructions:
1. Beat all ingredients together until you have a whipped cream consistency.
I then put a little of the chocolate whipped cream on a crepe, topped with raspberries, rolled them up, sprinkled a little powdered sugar on top to be fancy, and there you go! Delicious (non)Bavarian Cream crepes!

March 21: National French Bread Day and Fragrance Day
If you lined up all my fragrance products in a line they would reach from here to the moon. Okay, well not quite to the moon. But they do reach across my dining room table! I love body sprays. I've been known to get, well, a little carried away with them. I just like to smell good. I guess you could say I celebrate National Fragrance Day, everyday. If you think this is bad, then you don't want to know my record amount of mini hand sanitizers I once had...
A couple of weeks ago when I was at work, the following conversation took place as a customer was about to leave:
Me: Thanks! See you later.
(The man, who is the father of some guys I went to school with but who I don't actually know, starts to leave but then turns around)
Man: I just have to ask, what scent is your perfume?
Me: Uhhhh it's a vanilla scent.
Man: Aww ok. Well it smells really really good.
It is important to keep in mind that this guy is around the age of my father. I came home and told my dad that he is never allowed to compliment the fragrance of any of my friends. It was embarrassing.
Several days later, I was once again wearing a vanilla fragrance and as I was checking out at a clothing store, the around-17-year-old-girl says to me:
Girl: I don't want this to sound creepy, but you smell really really good. What scent is that?
Me: Uhhhh it's a vanilla scent.
What have I learned from this? Old men and younger girls (neither of which I am interested in) like the smell of vanilla. I've been staying away from vanilla scents lately and have been going with fruitier scents.
It's also National French Bread Day. Well, I could have just bought a loaf of french bread at the grocery store, but I made my own. It. Was. The. Best! It was light and airy and tasted so fresh. While it doesn't look as professional as if it were bought in a store, it tastes better. One day, I think I'm going to make all my bread at home using a bread machine. I love bread machines.
JazzyJ's Light And Airy French Bread:
Ingredients:
- 1 cup water
- 2 1/2 cup bread flour
- 2 tablespoons sugar
- 1 teaspoon salt
- 2 teaspoons yeast
Directions:
1. Place all directions in your bread machine in the order recommended by your manufacturer. Select dough cycle.
2. When the dough is done, place dough in a greased bowl, cover, and let rise in a warm place for about 30 minutes.
3. Roll dough out on a lightly covered surface into a 16 inch by 12 inch rectangle. Cut the dough in half so you have two rectangles.
4. Roll the dough up and taper the edges. Do the same to the other rectangle. You should now have two long dough logs. Slice diagonal cuts in the top every two inches to let steam escape.
5. Cook at 375 degrees for 20 -22 minutes.
Normally when I let dough rise, it doesn't do a good job. However, the picture above this one is before it was set to rise, and this picture is after rising for about 20 minutes! Rising success!! Also, what a pretty mixing bowl that is!

3. Roll dough out on a lightly covered surface into a 16 inch by 12 inch rectangle. Cut the dough in half so you have two rectangles.
4. Roll the dough up and taper the edges. Do the same to the other rectangle. You should now have two long dough logs. Slice diagonal cuts in the top every two inches to let steam escape.
5. Cook at 375 degrees for 20 -22 minutes.

Normally when I let dough rise, it doesn't do a good job. However, the picture above this one is before it was set to rise, and this picture is after rising for about 20 minutes! Rising success!! Also, what a pretty mixing bowl that is!

March 20: National Ravioli Day and Proposal Day
Today is National Proposal Day. So I have my wedding almost completely planned. The only problem is that I don't know who I am marrying nor do I currently have a boyfriend. But those two things aren't that important. I plan on getting married on a small island in the middle of a lake in Slovenia. Random? Yes. Beautiful? Absolutely. I fell in love with that place (and possibly the cute red-headed boy who rowed us across to the island in a boat) two summers ago when I visited with my family. I know that I am having chocolate covered strawberries at my wedding. And that I am having an ice-cream bar, cupcakes, and a cake! I also happen to know how I want to be proposed to.
Several of my close friends have very strict instructions on how my future-husband is allowed to propose to me. Does it have to be big and elaborate? Yes. I witnessed a proposal at Disney last Fall when I worked there. It was magical. I had previously wanted my future-husband to propose to me in a hot air balloon. However, I read an article about a man who proposed to his girlfriend in a hot air balloon, he then lost control of the hot air balloon and it crashed into the ocean. They were rescued by a combination of random surfer dudes and the coast guard. I never found out if she managed to not lose her ring in the ocean or if she changed her mind and later rejected him. Anyways, I plan to play it safe. I do however, plan on arriving to my wedding party (which will be held in the U.S. not in Slovenia) in a hot air balloon. Let's hope it's not windy that day. I would hate for my ice-cream bar to melt before I got to eat any.
Anyways, currently, I want my future-husband-to-be to give the proposal ring to Mickey Mouse ahead of time, and then when we go to get our picture taken with Mickey, my husband will get down on one knee and Mickey will hand me the ring. March 19: National Let's Laugh Day
I love to laugh. Laughter happens a lot around here because I am both extremely awkward and embarrassing. Take a look at yesterday's blog entry if you need a good laugh.
So what made me laugh the most today?
It started out normal as I opened a package from a clothing store I had recently ordered from. I saw all the clothes I was expecting and then...something purple with Batman on it? Was that part of a tutu? Upon a closer examination, it was determined that it was a purple toddler girl's bathing suit that featured a batman design and a tutu on it. I definitely did NOT order that.
I laughed so hard that I immediately had to face time my friend to show her.
The ironic part is, I love Batman. Like I really really love Batman. I can't wait until I have little kids and I can dress them in cute Batman clothes. So I could kind of see myself ordering a cute toddler Batman bathing suit for a kid ahead of time, even if I didn't have a kid yet. But I didn't!
My friend Courtney texted me back and said, "Are you sure you didn't order it? It looks like something you would buy for a future child!"
My friend Molly texted me, "Hahahah of course this is mailed to you!"
It evoked quite a long laugh from me. I still laugh every time I think about it or every time I see it. But now the question remains, what am I supposed to do with it?

March 18: National Awkward Moment Day
I don't even know where to start. I could start with the fact that I wore my underwear inside out today and I didn't discover it until half way through the day when it was too late to do anything about it.
My life is Awkward. I was asking friends what stories I should share and one of them suggested I should just dedicate an entire blog to my awkward moments. I could categorize them even. Awkward moments when I ripped my pants, awkward moments when I fainted, awkward moments when I said/emailed something awkward, awkward moments that resulted from my extreme love of foam soap...
I'll start out with this video...
This is me attempting to pond skim, which is where you bomb it down a hill and try to ski/snowboard all the way across the pond. It's harder than it looks. I had a pretty good wipeout but I didn't even win "Best Wipeout." My favorite part of the video is when you can hear my friend Allison (who is recording me) laughing pretty much the whole time. At the end I yell, "The DuckKnight will rise again." And then, "GO DUCKS."
Foam Soap:
I'll start out with my extreme passion for foam soap. I love foam soap. And there's no such thing as too much foam soap. If I happen to be at a fancy restroom, and they have quality foam soap, I will use about 27 squirts of it. I was getting ready for a track meet once in high school. Practically the whole girl's team was squished into a tiny restroom. Girls were at various stages of getting dressed/undressed. This is important to remember. I had used the restroom, and went to wash my hands. Alas! They had foam soap! My favorite! I squirted probably only 6 squirts on my hands and was generously foaming my hands up. It was at this time, that a teammate happened to tell me that the sinks didn't work. What do you mean they didn't work? I had just seen another teammate use them (or so I thought). I went to all three of the sinks and couldn't get any water to come out. I had an idea!
And what an idea it was! I decided maybe if I bent down, so my face was level with the sink, and pulled really really really hard, I could get the water to come out. Well, I was successful in getting the water to come out, but....there was a small problem. I pulled the entire faucet off of the wall and the very vicious stream of water hit me straight in the face. This was no small stream of water and as a result, the bathroom was starting to flood, and flood it did! All the girls in the restroom were screaming as they attempted to finish dressing. In my moment of stupor, I stood there, as the water hit me full force, soaking me, until someone shoved me out of the way. I looked around me. Girls were grabbing all their clothing off the floor and trying to take cover by standing on the toilets. One girl managed to escape and went for help, which only means, that by the time the rest of us had collected ourselves, and went to exit, that there was a whole parade of people outside waiting to see what happened. I exploded out of the restroom first, soaked and flustered, and out behind me came a wall of water and the rest of the girl's team. We eventually got the water turned off. I completed my track meet soaking wet. And I was the talk of the event. As I was warming up for every event, everyone kept asking if they heard what that one girl from that one town did. Little did they know it was me. So an important lesson from here, sometimes, less foam soap is better. It's also important to bring extra clothes to a track meet, like a whole extra uniform, just in case something like this happens.
Ripping Pants:
I've ripped a lot of pants in my life. I don't know why, it's just something that I am really really good at. During my first week of college, I was playing ultimate frisbee with a few girls I had just met. When I participate in any sport, I get really really intense and enthusiastic even though I am not very good. I was SO into playing ultimate frisbee that I wasn't paying attention and the grass turned into concrete and that is where I tripped and ate it. I was trying to catch my breath which had been knocked out of me when all of a sudden I was being lifted, lifted into the air and into the arms of some stranger boy. Here I am, confused, as this guy cradles me in his arms and checks over me for injuries. Do I know this boy? NO. Did this boy just leap over a three foot tall cement wall to rescue me? YES. Did I get this boy's phone number? NO. But I probably should have. After I thanked my mysterious rescuer for helping me, I attempted to return to the game of frisbee acting like nothing happened. My new friends were probably a little embarrassed of me by then. But just wait for it. Within less than a minute, I squatted to catch a frisbee and the air practically echoed with a loud "RIIPPPP." Yep, it was my pants. I had ripped them straight down the butt. It's not like I could pretend nothing had happened. Ripping pants has a very distinguished noise to it, and they all knew what had happened. Two of them just kinda looked at me. But the third, yes the third, was laughing her head off. Coincidentally, it's the one who laughed at me that is now my best friend. I casually stood back up, tied a sweatshirt around my waist, and went to my friend whose dorm was the closest and borrowed some basketball shorts from her. Now I was wearing somebody else's shorts who I barely knew. It was an interesting start to my college experience, that's for sure.
This post is getting long and I'm afraid I have lost readers so I will just give some honorable mentions to some other awkward moments that have happened to me.
Honorable Mentions:
- Fainting at work
- Fainting on the toilet (My friend's cousin once fainted on the toilet, fell off, and broke his nose! I managed to stay on the toilet until I was finished fainting. And it was my own toilet, which is good, not like a random public one.)
- Face planting into a burrito, getting spicy chicken juice in your eye, and having to change your contacts
- Meaning to email your teacher and offer him condolences about the death of his family member, but actually emailing him and apologizing for the death of the family member (the email sounded like I was responsible that this person died)
- Joining a "No-Shave November" beard growing contest, two years in a row, and winning "Honorable Mention" (No, I didn't actually grow a beard.)
- When my package got delivered to the wrong address, I pasted a note to the mailboxes asking someone to return it, it got returned but had awkwardly been opened

March 17: National Saint Patricks Day
Happy Saint Patrick's Day!
I decided to celebrate by eating green food for dinner. I had a dinner consisting entirely of green beans and broccoli. Okay, I admit, I was exhausted from work and wanted an easy dinner, but hey, it fit today's theme. I hope you all remembered to wear green.
Green items I wore today: green shirt, green earrings, green hair bow, green mascara, green underwear, green eyes (which, coincidentally, I always "wear")
I had on green eye shadow but I looked a little scary so I had to veto that.
I also made a delicious green dessert.
JazzyJ's Green IceCream Delight For Saint Patrick's Day
Ingredients:
- 1 half gallon green ice cream (I used mint cookie ice cream but mint chocolate chip would work as well)
- 1 Oreo cookie crust (you can find these at most grocery stores)
- Oreo cookies (smashed to pieces)
- A variety of green sprinkles
Directions:
1. Let ice cream sit out enough to soften so it is easy to scoop.
2. Scoop ice cream into the Oreo cookie crust and smooth so it looks nice and even.
3. Smash up about 8 Oreo cookies. I put them in a ziploc bag and gently hit them with the back of an ice cream scoop.
4. Sprinkle the smashed Oreo pieces on top.
5. Decorate with green sprinkles! Remember: You can never have too many sprinkles.
6. Put back in the freezer for a while so it hardens again.
