June 3: National Chocolate Macaroons Day

I baked coconut macaroons last week. And today, I made chocolate coconut macaroons.

Scrumptious. Rich. Gooey. Chocolately.

We had a friend over for dinner and I was in charge of dessert, which of course, was going to be chocolate macaroons.

However, once they came out of the oven I loudly exclaimed, "We cannot serve these to a dinner guest."

They looked a little lumpy, until I realized that's what they are supposed to look like. I served them anyways and they were a hit.

Because it's not what the food looks like, it's how it tastes.

It's also my brother's birthday. Happy Birthday Bro, even though you never read this blog anyways.



JazzyJ's Scrumptious Chocolate Coconut Macaroons:

Ingredients:
- 4 ounces bittersweet or semi-sweet chocolate, melted
- 1/4 cup cocoa powder
- 3 egg whites
- 3/4 cup sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 3 cups shredded coconut


Before baking.

Directions:
1. Lightly beat the egg whites. Add in the sugar, cocoa powder, salt and vanilla. Stir well.
2. Add in the shredded coconut. Mix in the melted chocolate.
3. Refrigerate for about an hour, to let the mixture stiffen up.
4. Place big spoonfuls of the mixture on a cookie sheet lined with parchment paper.
5. Bake at 325 degrees for 10 -13 minutes, or until shiny on top.
6. Let cool.


And after baking.

They were a breeze to make, and a breeze to eat. Sadly, we didn't have any leftover. But that's ok. Because I'll be making them again.
