February 4: National Home Made Soup Day

Winters at my place can get pretty cold and that's why soup is always a good idea for dinner. I decided to celebrate National Home Made Soup Day by making my very own special chicken noodle soup.
Liliana Cecelia Grace was my helper today!

Ingredients for JazzyJ's Chicken Noodle Soup:
  • 1/2 cup chopped onion
  • 64 oz. chicken broth
  • 2 cups cooked chicken cut up
  • 2 cups egg noodles
  • 1 cup sliced carrots
  • 1 1/2 cups green beans
  • 1 1/2 cup corn
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • pepper to taste

Everyone liked this soup!
 
Note: Most people put celery in their chicken noodle soup and that is fine. However, just like I believe vegetables don't belong in cake (see here), something doesn't feel right to me about putting celery in soup. 

Second Note: I kept complimenting this soup and then remembered that I was the one who had made it. Note to self: Don't compliment your own soup to your friends too many times!

 I cooked the carrots and onion ahead of time to soften them up. Add all the ingredients except the noodles in a large pot and cook about 20 minutes. Stir occasionally. I added the noodles approximately 8 minutes before I was ready to serve the soup. I ate mine with a warm buttery roll and called it a night!

  1. So you are strongly opposed to celery in soup -- but did you eat any of the onion or carrots?
